Our full-time on-site Sustainability Manager works directly with the culinary team, operations managers, student experience team, and sourcing partners to optimize our practices and find new ways for you to get involved.
Hi, I’m Caroline Shaver!
I am excited to support UAlbany's sustainability initiatives, focusing on reducing environmental impact and promoting sustainable practices across campus. This includes developing and implementing programs related to energy efficiency, waste reduction, and climate action, while engaging students, faculty and staff in creating a greener campus community. With a passion for environmental stewardship and collaboration, I work to ensure Great Dane Hospitality aligns with the University to meet its sustainability goals and foster a culture of responsibility for future generations.

Working Toward Zero Waste
We proudly support the sustainability goals of the University at Albany. Here are a few active initiatives.
Robust Recycling
We recycle cardboard, metal, paper, glass, and accepted plastic products, and we recycle uncommon items—such as batteries and printer cartridges—wherever possible.
Collaborative Composting
We work with local providers to collect organic materials—including food waste and compostable service items such as napkins and wooden stir sticks—to be composted into useable, nutrient-rich soil amendments.
Proactive Prevention
We use tracking and forecasting tools to proactively identify food waste trends in order to alter our preparation accordingly.
